The “RAW” restaurant, jointly launched in Taiwan by André Chiang, former executive chef of the French Michelin three-star restaurant Le Jardin des Sens, and the HSH Group, has been extremely popular since its opening on December 9. Making a reservation is as difficult as booking train tickets during Taiwan’s traditional peak travel periods.
