The sweat pot, also known as the Zhenfeng Steam Pot, originates from Zhenfeng County in the Qiandongnan Miao and Dong Autonomous Prefecture, at the junction of Yunnan, Guizhou, and Guangxi. This earthenware pot has a unique structure consisting of three parts: the base, the steaming bowl, and the top pot. The rim of the bowl is surrounded by multiple vent holes, allowing steam to pass through the side walls into the bowl. This steams the chicken without adding a single drop of water inside the bowl. As the steam rises and meets the cold water in the top pot, it condenses into distilled water that drips onto the chicken like sweat, hence the name “sweat chicken.”
