The sweat pot, also known as the Zhenfeng Steam Pot, comes from the border area of Yunnan, Guizhou, and Guangxi, specifically Zhenfeng County in the Qiandongnan Miao and Dong Autonomous Prefecture. This earthenware pot has a distinctive structure made up of three components: the base, the steaming bowl, and the top pot. The edge of the bowl is dotted with multiple vent holes, enabling steam to enter the bowl through the side walls. This method steams the chicken without adding any water directly into the bowl. During the process, the rising steam condenses into distilled water when it meets the cold water in the top pot, and the droplets fall onto the chicken like sweat—thus the name “sweat chicken.” Wunan’s flagship store specially promotes this sweat pot. After a year of research, mold-making, and testing, the final version of the sweat pot was completed. The locally-raised chicken cooked in the sweat pot is tender without greasiness, boneless yet bursting with flavor, juicy and fragrant with a clear and delicious broth. Every drop is rich and mellow, preserving the essence of the chicken.
