Ancient Fermentation Pits of Gaolujiu Distillery

The Ancient Fermentation Pits of Gaolujiu Distillery is a cultural relic protection unit of Anhui Province.

The Ancient Fermentation Pits of Gaolujiu Distillery mainly consist of twelve fermentation pits from the Qing Dynasty and an ancient well also dating back to the Qing Dynasty. The fermentation pits were built during the Jiaqing era of the Qing Dynasty and are arranged in a 3×4 grid. Each pit is 1.65 meters deep, 3.25 meters long, and 2.65 meters wide, with walls made of yellow sand. The ancient well was constructed during the Jiaqing period of the Qing Dynasty, with a wellhead diameter of 80 centimeters and a depth of about 12 meters, lined with large blue bricks. This heritage site is a facility ruin that comprehensively showcases the traditional Chinese liquor-making process. It integrates fermentation pits, water sources used in brewing, fermentation floors, and other brewing facilities, all arranged logically with well-matched equipment and unique techniques. This site provides physical evidence for studying the history and craftsmanship of liquor production in the Su-Lu-Yu-Wan region, and holds significant historical, scientific, and economic value.

Protected Area: A zone with a radius of 31 meters east and west, and 82 meters north and south, centered on the 12 ancient Qing Dynasty pits.

Construction Control Zone: A buffer area extending 20 meters east, 60 meters south, 30 meters west, and 10 meters north beyond the protected area.
