As long as you remember the key sauce ratio, you can easily make this classic home-style dish: sweet and sour pork ribs. You can also fry extra ribs in advance to keep on hand. Whether you use them later for soup or eat them as is… they’re all great options.

Ingredients:
400g pork ribs
Sweet potato starch (as needed)
1 egg yolk
Half each of red, yellow, and green bell peppers
1/4 onion
1 tsp minced garlic
Pork rib marinade
1 tbsp soy sauce
1 tbsp rice wine
1 tsp sugar
1/2 tsp ground pepper
1/2 tsp minced garlic
Sweet and sour sauce
3 tbsp water
1.5 tbsp sugar
1.5 tbsp vinegar
1.5 tbsp ketchup

Method:
1. First, mix the pork ribs evenly with the marinade and let marinate for at least 60 minutes.

2. After marinating, add the egg yolk to the ribs and mix well.

3. Coat the ribs evenly with sweet potato starch, thenlet them sit for 5 minutes to allow the starch to absorb moisture.

4. Then deep-fry the ribs inoil at 170°C until 70% cookedRemove them, thenincrease the oil temperature to 190 degrees, and deep-fry the ribs again until golden and crispy before setting aside.

5. In a wok, heat oil and sauté the onions and minced garlic until fragrant, then add the green and sweet peppers and stir-fry until 70% cooked before setting aside.

6. In the same wok, stir-fry the tomato sauce until aromatic.

7. Then add water, sugar, and vinegar, and bring to a boil.

8. Finally, add all the ingredients to the wok, stir-fry until evenly coated with the sweet and sour sauce and the ingredients are fully cooked. Done.

Tips
1. You can prepare extra ribs, as they’re very convenient for other uses later.
2. The green and sweet peppers can be blanched in oil so you don’t have to stir-fry them separately. (Although blanching is quicker, it’s relatively oilier, so use your discretion.)
3. Sweet and sour sauce ratio: water = 2; sugar, vinegar, tomato sauce = 1.
