As mentioned earlier, after having a late-night snack at Ah Zheng’s on Friday, I headed straight for Ah Mou’s on Saturday morning. For me, this was a golden opportunity because Ah Mou is closed on Sundays, and usually sells out of pork by noon on regular days.

Ah Mou has been running his shop for over 30 years, and the characters on his signboard have faded. Since he opens early in the morning, the later you go, the more likely you are to miss out (?). I read that the pork skin is often sold out after 9 a.m., and it was really just my luck — when I arrived just after 9, the elderly gentleman in front of me had just ordered pork skin and left, and by the time it was my turn, it was gone (just one step short). After one bite, I knew this place really suited my taste — especially the tenderness and smoothness of the lean meat from the leg, which ranked among the best I’ve had at pork rice shops so far (based solely on this experience). The outer skin was also delicious, with all its rich flavors coming through. No wonder pork skin is such a hit; it’s truly heartbreaking that I missed out on it. That might be a bit of an exaggeration, but honestly... just one piece of pork wasn’t enough to satisfy me...

Among pork rice varieties with a lighter sauce flavor, Ah Mou’s is probably the one I’d most want to revisit. The whole piece of meat is well-seasoned, releasing the aroma of braised juice with a hint of sweetness. I heard the old broth is infused with clams for added flavor, but the sweetness from sugar seems more pronounced. In contrast, Lao Zhu’s version is saltier with a softer, mushier texture, while Ah Xing’s is firmer (though I prefer their pig’s trotters). Overall, Ah Mou’s texture and flavor really win me over.

(Pair it with a bowl of radish ball soup with pork skin — I heard you have to come earlier to get the “circle” ones.)
