On March 19 last year, an event called “Good France – A Taste of France,” organized by the French Ministry of Foreign Affairs and connecting 150 countries across five continents with 1,300 French chefs, served the same certified menu format that evening. Four restaurants in Taiwan were selected, including “STAY” opened by a three-Michelin-star chef in Taiwan, L’Atelier de Joël Robuchon alumna and 2014’s Asia’s Best Female Chef Eugenie Chen’s restaurant Le Moût, the Paris 1930 at the Ambassador Hotel, and a French bistro located in Tainan.

Le Moût French Restaurant
Le Moût French Restaurant in Taichung was founded by Eugenie Chen, who graduated first in her class from the prestigious Ferrandi Paris Culinary School (ESCF - Ferrandi) in Paris. She has worked at three Michelin-starred restaurants and collaborated with renowned French pastry chef Pierre Hermé. After returning to Taiwan, she opened Le Moût, notable for integrating unique Taiwanese ingredients into French cuisine. The restaurant has been listed in Asia’s 50 Best Restaurants for two consecutive years, and Chef Eugenie Chen was also awarded “Asia’s Best Female Chef 2014” by Veuve Clicquot.

S.T.A.Y
Simple Table Alleno Yannick (S.T.A.Y) is a French restaurant opened in Taiwan by three-Michelin-star chef Yannick Alléno. It blends modern design with elegant service. The core cooking philosophy at S.T.A.Y is purity—allowing each dish to reveal different layers through sight, smell, and taste. The chef’s commitment lies in preserving the individual character of each ingredient while achieving overall balance. The current Executive Chef at STAY & Sweet Tea is Eric Vidal, skilled in merging traditional and innovative cooking with global influences, presenting classic European main dishes. The resident Pastry Chef is Alexis Bouillet.

Paris 1930 is the earliest restaurant in Taiwan to introduce authentic fine French dining. Since its establishment in 1979, its signature has been modern French cuisine with Michelin standards, showcasing the pursuit of perfection and detail in French culinary art, making it a model of refined dining in the eyes of food connoisseurs. The current French Chef, Clément Pellerin, has worked in starred hotels and Michelin French restaurants in Paris, Shanghai, and Bangkok. He skillfully uses local ingredients, along with endless creativity and sensory aesthetics, to create stunning modern French dishes.

French Bistro
The French Bistro is a French restaurant co-founded by Frenchman Nicolas and his Taiwanese wife Kathy. Its English name is A Table, and the restaurant literally has just one table, seating only about ten guests. The meals offered are tasting menus: lunch sets start from NT$750, and dinner sets from NT$1,200.
