Dried bamboo shoots are one of my favorite ingredients. Back when I used to attend banquet-style wedding dinners, I always looked forward to the dish with dried bamboo shoots and pork leg. I would eat tons of the bamboo shoots but barely touch the pork. Unlike regular braised pork, this dish also has a tangy flavor, and the dried bamboo shoots become even more flavorful after being simmered in the braising liquid—this is exactly why this dish is so popular. Ingredients:

1 kg pork belly
250 g dried bamboo shoots
2 garlic cloves
1 green onion
4 slices ginger
1.5 tbsp rock sugar
350 ml soy sauce
200 ml rice wine
Water as needed
Chili peppers to taste

Instructions:

1. First, blanch the dried bamboo shoots in boiling water to remove excess saltiness.

2. Then, heat some oil in a pan and pan-fry the sliced pork until the surface is lightly browned and golden.

3. Add the sliced green onion, ginger slices, and garlic, and sauté until fragrant. Then add the rock sugar and stir until it melts.

4. Next, pour in the rice wine, soy sauce, and water, and add the blanched dried bamboo shoots. Simmer everything together. (The amount of water should just cover the ingredients.)

5. Once the pork is tender and well-flavored, add chili peppers to taste and simmer until done.

Tips

1. Dried bamboo shoots have a certain level of saltiness and tanginess, so be sure to blanch them first to remove those flavors, otherwise the dish might end up too salty.
2. The amount of dried bamboo shoots can be adjusted to your preference, but don’t add too much.
3. The saltiness of soy sauce varies by brand, so please adjust the amounts of soy sauce and sugar to suit your personal taste.
