The head chef of Asia 49 Asian Cuisine & Lounge is Marcus Ng, a 32-year-old Chinese chef from Penang, Malaysia. After graduating from a local culinary school, he sought more experience working in Vietnam, Indonesia, Thailand, as well as in the southern hemisphere in the Maldives, Australia, and Papua New Guinea. Having traveled widely, Chef Marcus also enjoys sampling local cuisines from different regions, which has made him not only skilled in Malaysian dishes but also proficient in Thai, Indonesian, and Vietnamese cuisines. Marcus noted that currently about 50% of the menu features Malaysian dishes, with the rest mostly Thai, Indonesian, and Vietnamese. In the future, Korean and Japanese dishes may also be added.

The menu is divided into seven categories: appetizers, seafood, meat, vegetarian, curries, noodles & rice, and desserts, featuring nearly 40 dishes. Chef Marcus highly recommends must-try Malaysian national dishes such as Penang curry laksa noodles, rendang beef curry rice, Upnor fruit and vegetable salad, otak-otak grilled fish, and Nyonya spring rolls. Other signature dishes include Thai shrimp cakes, slow-cooked lamb chops with spring onion sauce, green papaya salad with crispy soft-shell crab, as well as Vietnamese spring rolls, black pepper clams with French bread, and Indonesian satay chicken skewers... among others.
