The menu is listed on the wall—it’s not expensive, but there’s no other language available

The leeks served with the grilled sausages, mixed with spicy sauce, have a very enticing aroma that’s both sweet and savory

The pickled onions have a milder spiciness and a noticeably sweet flavor

The Gamjatang (spicy pork bone and potato soup) with green onions starts boiling, and then the grilled sausages are served

It can also be eaten as a salad on its own, but it’s even better when paired with the fat from the grilled large intestine

When the beef rumen and beef heart start to curl up, you can slice them

As for the small intestine and large intestine, just make sure the outside doesn’t get overly charred before slicing

The excess fat will naturally drain away

The grilled small intestine has a firmer, sweeter bite with a powdery texture inside

The grilled beef large intestine is actually my personal top recommendation for its rich, fatty, and sweet flavor

Aside from indulging in delicious food during this trip to Seoul, another goal was to catch up with a Korean friend. Since his workplace is near Cheonggyecheon Stream, when we talked about wanting to eat grilled sausages for dinner, we thought of this grilled sausage warehouse with many branches. Coincidentally, there’s one right across from his company, which he often visits with colleagues after work. So we came here to try it. The name of this ??? grilled sausage warehouse is quite interesting, combining ??? (grilled sausage) and ??? (warehouse). It specializes in combo grilled sausage sets, with each serving costing less than 10,000 KRW—about 20% lower than the average market price. Plus, with dozens of locations nationwide, it’s a pretty convenient choice for grilled sausages.

I ordered the basic mixed grilled sausage combo, which includes four types: small intestine, large intestine, omasum, and beef heart. Since they're pre-cooked to almost fully done, you just need to heat them up on the iron plate before eating. The small intestine has a fairly firm texture with a slightly powdery interior, a sweet and fresh taste, and is easy to chew. However, it’s not very flavorful on its own but pairs wonderfully with the sauce and spicy leek. The sweetness of the leek juice complements the umami of the small intestine, and the spicy sauce ties all the flavors together seamlessly. This way of eating is genuinely interesting. But personally, I think the large intestine is the highlight of the whole grilled sausage set. It’s packed with rich fat that keeps oozing out during grilling. Eating it plain lets you enjoy its bold, sweet richness, and pairing it with leeks makes you realize just how good these grilled sausages really are. This item is highly recommended.

As for the omasum, the meat is naturally quite tough, so it needs to be scored with many fine cuts beforehand. It’s also a fairly fatty part, but the flavor is more mild. Compared to the other grilled sausages, it’s more about the texture—just grill it until it curls slightly, then slice it and cook it a little longer before eating. The texture is similar to pig stomach but firmer and more elastic. Those with sensitive teeth might want to cut it into smaller pieces with scissors. The beef heart has a finer yet tougher texture compared to pork heart, and its mouthfeel is completely different from the sausages or tripe. It should be sliced and eaten as soon as it curls slightly. Strictly speaking, grilling isn’t the best way to cook beef heart—the delicate sweetness is easily overpowered by the sauce and fat, and the secondary heating makes it even tougher and drier. It doesn’t shine as much as the other three.

The mixed grilled sausage combo also comes with a spicy ma-yak tofu hot pot. Unlike the rich and refreshing miso soup commonly found elsewhere, this spicy hot pot is bold and heavy on the palate, which is quite satisfying for the taste buds. The sweetness of the vegetables keeps it from being monotonous, but it’s best enjoyed hot and early, otherwise reheating the thick iron plate of grilled sausages can be a bit troublesome.

Among the main dishes, two are particularly popular. First, I’d highly recommend the cold buckwheat noodle soup in ice broth. While waiting for the grilled sausages to cook, you can start eating this right away. The broth, made with kimchi and seaweed, is tangy, sweet, and icy cold, providing a refreshing contrast to the fat from the grilled sausages and giving your palate a break. It’s even more enjoyable when eaten together. The acorn jelly in it has a unique flavor and helps cut through the grease. Its slightly bitter yet rich aroma is a great antidote to richness. The noodles are tender buckwheat noodles, not as chewy as cold somyeon noodles, so they’re filling yet easy to digest—definitely recommended. After grilling the sausages, you can also try the signature fried rice, which is the common stir-fried rice served in nostalgic metal containers with seasoned rice, a sunny-side-up egg, and seaweed, all placed atop the leftover fat from the grilled sausages. It’s a way of enjoying the meal without wasting any delicious elements. The slightly charred, crisp rice is delicious, and this method really highlights the flavor of the grilled sausages. But in hot weather, the cold noodles are still more recommended, so just order one of them.

Grilled Sausage Library is a grilled sausage chain with many locations, known for its mixed grilled sausage platter under 10,000 KRW. It’s a great choice for those who just want to try grilled sausage dishes. It’s convenient and not expensive, and the offal varieties generally perform quite well, especially when paired with spicy leeks and sauce. When you leave, you can even take a free ice cream stick per person—it’s a pretty complete meal and quite accessible for foreign visitors. Although the grilled sausages are almost fully cooked before serving and just need reheating, which isn’t difficult, tourists unfamiliar with grilling might still need some help. During the meal, you’ll often see staff checking on tables and even helping with the grilling, which is quite thoughtful. But it’s still better if you know how to grill or have a Korean friend with you.
