In the first-ever Shanghai Michelin Guide released this year (2016) in Shanghai, Lady Goose in Xinzhuang, a Chinese Cantonese cuisine brand independently created by Taiwan’s Wang Group in mainland China, was awarded one Michelin star. When will diners in Taiwan get to enjoy Lady Goose’s Michelin-starred cuisine? Wang Group Chairman Chen Cheng-hui stated that the key to opening a store in Taiwan lies in whether they can find geese of the same high quality as those in mainland China—if they can find them, they can open the store.

When Lady Goose was first established in mainland China, to create its delicious gold-medal roasted goose, the team sought out the most suitable local geese for making tasty roast goose—the dream ingredient in the eyes of roast goose masters—black-brown geese. Known for their plump bodies, tender meat, fine bones, and crispy skin, black-brown geese are hailed as the “Napoleons of the goose world” and are considered premium ingredients for cooking roast goose. Chen Cheng-hui said that the timeline for Lady Goose’s return to Taiwan depends not on how early or late, but on whether they can find geese in Taiwan that meet Michelin-level quality. However, Chen also mentioned that if they really can’t find good geese, they won’t rule out raising their own geese or investing in goose farming.

In addition to Lady Goose, Wang Group will launch one more Sichuan cuisine brand in mainland China this year. In Taiwan, another Western cuisine brand will be added before the end of the year. Next year, two more brands will be added in both mainland China and Taiwan. Regarding Wang Group, Chen Cheng-hui said that 2015 was a year of damage control, while 2016 was about restructuring. As a result, some stores under the brand will close, but new ones will also open. From the second half of the year, new brands began expanding, and in 2017, the expansion of both old and new brands will accelerate.
