From kitchen helper to executive chef, he has remained steadfast throughout his 17-year journey in the culinary industry. Over the years, Mr. Shi Lei has collaborated with fellow chefs and industry experts, drawing on the strengths of renowned establishments to rediscover traditional folk dishes. He integrates these discoveries with research and innovations from master chefs in the field, achieving a seamless fusion of techniques and flavors.
Mr. Shi Lei graduated from Yangzhou Business College, one of China’s four leading culinary institutes. With 17 years of experience in the kitchen, he currently serves as Executive Chef at Hangzhou Yunqi HNA Resort. He has previously held the position of Executive Chef at various prestigious venues, including the Shanghai Xijiao No. 5 Clubhouse, Yadong International Hotel in Haining, Zhejiang, Changsheng International Hotel in Tangshan, Xiyong Ancient Castle Clubhouse in Suzhou, SOHO Quande Clubhouse in Beijing, and Nanchizi No. 6 Courtyard Clubhouse in Beijing. He specializes in Huaiyang cuisine, Shanghai-style cuisine, fusion cuisine, conceptual cuisine, imperial cuisine, and health-focused dishes. He has been awarded the Special Gold Award at the First National Yak and Tibetan Sheep Culinary Competition, the Special Gold Award at the National Young Chefs Culinary Competition, the Gold Award at the Seventh National Culinary Competition, and the Special Gold Award at the Fifth National Seafood Culinary Competition. He has also been honored as one of the Top Ten Golden Dishes in China.
