Pancake shops can be found on every street corner, but while grid pancakes are nothing special, have you ever tried the so-called “only one of its kind in southern Taiwan”—Kawabata authentic thick pancakes? Frostflower Café in Yongkang, Tainan, has been open for over four years, yet it still draws many visitors who come to worship its signature pancakes.

Taipei has its super-popular bubble tea pancakes, and you can enjoy them at Frostflower Café too. The daily limited-edition 8-serving bubble tea soufflé isn’t just a thicker version—it’s made with two layers of thick pancakes stacked together, giving it a more substantial texture. Topped with generous amounts of Earl Grey tea sauce and the café’s daily fresh-cooked pearls, the overall taste carries a lovely tea aroma that isn’t overly sweet.

In addition to soufflé thick pancakes, to cater to different customer preferences, the shop specially offers three types of textures and over ten flavors of pancakes. There’s the mochi-like textured crêpe-style pancake, as well as six flavors of freshly pan-fried thick pancakes, each with their own dedicated fans. However, since soufflé thick pancakes are fluffier and softer, they come in a double layer; freshly pan-fried thick pancakes have a firmer texture, so they’re served as a single layer.

To celebrate strawberry season, the café has recently launched a winter-exclusive strawberry milk tea soufflé thick pancake, made with handcrafted strawberry jam from locally grown Taiwanese strawberries and topped with a few fresh strawberries. The soft and fluffy texture of the soufflé pancake pairs perfectly with the sweet-tangy strawberries, making it one of the best-selling items since its launch.
