It’s truly a blissful feeling to have a bowl of hot soup when the weather turns cooler. This time, we’re using bamboo fungus—believed in Traditional Chinese Medicine to relieve pain, boost qi, lower blood pressure, and reduce cholesterol—paired with lotus seeds, known for their benefits to the spleen and stomach, lungs, and calming the heart and mind... among other advantages—to create this soup. We hope to offer you a different and delicious chicken soup to enjoy throughout the coming winter.
Ingredients:
600g chicken
15g bamboo fungus
600g clams
half a bowl of lotus seeds
5 slices of ginger
a pinch of salt
2 tablespoons rice wine
1800ml water
Method:
1. First, soak the bamboo fungus in water and set aside.

2. Blanch the chicken, then rinse and set aside.

3. Next, place the chicken, ginger slices, lotus seeds, and water into a pot, and bring to a boil over high heat.

4. Then, reduce the heat and simmer for about 50–60 minutes.

5. Finally, add the bamboo fungus and clams to cook until done. Just before serving, stir in the rice wine and salt to season. Done.

Tips:
1. Adding the clams and bamboo fungus at the end helps retain their original texture.
