Unstoppable popularity: 5 beef noodle shops in Taichung loved by locals

CNN once reported that "a bowl of beef noodles takes you on an authentic Taipei experience," as Taipei offers beef noodles in all price ranges and flavors—from the highly popular Lin Dongfang Beef Noodles to the nearly NT$500 Jinghua Beef Noodles. But beyond Taipei, delicious beef noodles can also be found across Taiwan, including five popular spots in Taichung beloved by locals.

Governor’s Mansion Beef Noodles
Located in Dali District, Taichung, Governor’s Mansion Beef Noodles is only open on Fridays, Saturdays, and Sundays each week. Even so, many regulars and visitors drawn by its reputation come to enjoy its tender and flavorful beef noodles. This shop in Dali District was opened after retirement by an elderly couple in their 70s, and there's also a branch at Taiyuan Railway Station. As for the origin of the name, owner Fu Zhiyi explained that his ancestors once served as governors during the Qing Dynasty, hence the name Governor’s Mansion. Due to limited staff on weekdays, the owners’ children help out on weekends, which is why it’s only open then.

Hunan-style Beef Noodles
This Hunan-style beef noodle shop on Jingwu Road in Taichung fills up immediately after opening at noon every day. As a decades-old establishment, it has many loyal customers, and a bowl costs NT$120. The broth is clear with an amber hue—different from red-braised or clear-simmered styles—and the aroma of beef wafts from the bowl without any greasiness. It’s simmered with beef tendons, beef slices, and beef bones. Blogger Orange Dog Loves Candy found the broth refreshing aside from its fragrance, with a subtle sweetness and no oily feel. The noodles are said to be specially selected from a particular manufacturer, but some felt they were slightly overcooked and became softer toward the end.

Liuliu Shun Beef Noodles
This place only serves three types of noodles: beef noodles, beef soup noodles, and shredded pork with pickled mustard greens noodles. Small bowls of beef noodles cost NT$140, large bowls NT$170. Though the broth is said to include Chinese herbs, blogger Orange Dog Loves Candy didn’t find the herbal flavor too strong. With pickled vegetables and chopped scallions added, it has a nostalgic veterans' village vibe. The broth is rich and deeply flavorful, and there’s a generous portion of noodles, which are somewhat similar to round straight noodles.

General’s Beef Noodles
General’s Beef Noodles was founded by Zhang Beihuo, known as the “Gourmet God.” Their award-winning “Golden Chef Award Beef Noodles” are the signature dish, but aside from the beef noodles, dishes like Nine-Turn Intestines, Water-Boiled Beef, and Dongpo-Dried Tofu are also popular—some even come specifically for those.

Renyi Beef Noodles
This is also said to be one of Taichung’s top three beef noodle shops. Established over 50 years ago, it is now managed by the third generation. Aside from the main branch on Minquan Road, there are also branches on Liming Road and Wenxin Road. The broth is simmered with a Chinese herbal blend as well as ingredients like beef bones and vegetables, filling the air with aroma upon serving.
