Nestled within the green promenade opposite the art museum, Mingsen Uji Matcha Boutique feels like stepping into a Japanese garden along Kyoto’s narrow streets. Various Japanese tea ceremony bowls, utensils, iron kettles, and small canned matcha products showcase the beauty of Japanese tea culture. The premium matcha used at Mingsen Uji is made from spring tea leaves, which are shaded with thin gauze for 20 days before harvest in mid-May. After air-cooling and drying, the leaves are deveined and stemmed, then ground into powder using a stone mill rotating at 60 rpm per minute, yielding an average particle size of 3 micrometers. A classic item is the Kyoto-style Yōkan Red Bean dessert, made with brown rice tea, matcha powder, and crushed mung bean paste, wrapped around a subtly flavored red bean filling—no oil is used, so it’s frozen to set. The best taste is achieved after letting it sit at room temperature for ten minutes, offering a perfect, non-sticky bite. From matcha ice cream and agar to soft serve, different types of matcha are used to achieve the optimal flavor. For the soft serve, to avoid any graininess affecting smoothness, not only is sub-premium matcha powder used, but it also undergoes a special water-bath heating process.

The founder of Hoshino traveled to the brand’s original location in Tokyo to master the craft, bringing the most authentic copper roast back to Taichung and perfectly recreating its original Japanese flavor. Every step of the copper roast-making process is strictly controlled, with Hoshino’s pursuit of perfection and dedication to slow craftsmanship ensuring excellence. Even the red bean filling is meticulously prepared. Imported Japanese red beans are simmered slowly over a day until the syrup reduces, resulting in a red bean paste with distinct, fluffy, and tender grains. Paired with dough made from traditional Japanese brown sugar, the copper roast has an exceptionally rich flavor. There are four fillings to choose from: original, matcha, coffee, and cherry. Among them, the subtle, elegant matcha flavor is the most popular.
