The ultra-popular tsukemen (dipping noodles) specialty shop “Fujisan 55 Tsukemen” from Japan has made its first foray into Taiwan, with its Taiwanese flagship store located near the bustling Taichung Technology Park. “Fujisan 55 Tsukemen” originated in Nagoya and is the founding shop of tsukemen in the Kansai region of Japan, boasting over 50 years of history. Each dish is made using fresh, locally sourced ingredients. The broth is rich and delicious, crafted through a complex two-day pressing process where large amounts of pork bones are simmered for 12 hours to extract their collagen essence. The next day, the fat is skimmed off, and a generous mix of vegetables, chicken feet, and chicken is added before another 12-hour simmer to create a deeply flavorful and aromatic pork bone broth. As for the noodles, no detail is spared—Fujisan 55 Tsukemen uses a precisely measured flour ratio and the master’s years of expertise to handcraft “Super Thick Noodles” with a moisture content as high as 40%. These noodles are chewy, firm, and smooth, pairing perfectly with the rich broth for an indescribably delicious experience.
