Maple leaf tempura is a signature local delicacy of Minoo, Osaka, with a history said to span a thousand years in the region. It’s a common market snack. Though it looks simple, the preparation is quite involved: after cleaning the leaves, vendors must maintain a controlled environment of specific humidity and temperature to salt-cure them for a full year. Once ready, the cured leaves are coated in a batter made of flour, sesame seeds, and powdered sugar, then deep-fried.
