Packed with veggies — Japan’s direct operation brings Nagasaki Champuru Ramen back to Taiwan

Champuru Ramen, packed with vegetables, is a must-try local dish when visiting Nagasaki, Japan. The well-known Japanese chain Ringer Hut features Nagasaki Champuru Ramen as its signature item and has over 750 outlets across Japan. Nagasaki Champion Ramen (also commonly called Champuru Ramen in Taiwan) originated in Nagasaki City’s Chinatown. In Japanese, the term originally referred to a ramen dish where vegetables, meat, and seafood are cooked together. Each household in Nagasaki has its own unique version of the recipe. Yang Yilun, deputy general manager of Ringer Hut Taiwan (Linco Foods), noted that Ringer Hut’s Champion Ramen combines the best elements of various versions to create a universally loved flavor. The dish also incorporates seasonal vegetables like edamame and comes in generous portions.

To ensure an authentic taste in sync with Japan, for this relaunch, the broth and noodles for both Nagasaki Champion Ramen and Nagasaki Signature Crispy Noodle Ramen are imported directly from Japan. These two ramen dishes are flagship offerings at all outlets. Beyond the signature items, Ringer Hut has also collaborated with National Kaohsiung University of Hospitality and Tourism to develop three Taiwan-exclusive new dishes that incorporate local culinary culture: Tower-fragrant Three-Cup Braised Chicken Fried Noodles, Spicy and Numbing Red Broth Ramen, and Pumpkin Vitality Golden Thick Broth Ramen.

Another highlight of Ringer Hut Japan Nagasaki Champion Ramen is the kitchen's two automated devices: one is an automatic vegetable stir-fry machine. Yang Yilun explained that this equipment allows precise timing and temperature control, reducing staff workload so they can attend to other tasks while cooking. The second is an automatic noodle-cooking machine, which includes four induction cooktops. After loading the stir-fried vegetables, toppings, noodles, and broth into a pot, it is placed on the first induction cooker. The machine automatically switches the pot to a new cooker every 26 seconds. Once the pot finishes heating on the fourth cooker, it’s done—just pour it into a bowl and garnish slightly to complete the dish.
