Michelin-starred Chef André Chiang’s French Mentor to Guest Chef at S Hotel’s Nordic Restaurant HYG – Meal Price NT$5,000

It’s no longer rare for Michelin chefs to make guest appearances in Taiwan, but this time the Nordic restaurant “HYG” within Taipei’s S Hotel has invited the renowned French Michelin three-star chefs Jacques and Laurent Pourcel. Moreover, this twin-chef duo were actually André Chiang’s mentors twenty years ago—André trained under them at the Pourcel restaurant for five years.

The Pourcel brothers are among the world’s most celebrated French creative chefs, known for interpreting classic dishes from southern France and the Mediterranean with a modern twist, infusing their uniquely personal and distinctive culinary philosophies. As international benchmarks of innovative French cuisine, the Pourcel brothers have continuously expanded their global presence, having opened brasseries, bistros, bars, and multi-concept dining venues in cities including Paris, Geneva, Bangkok, Tokyo, and Marrakech. Their acclaimed journey began in 1998 with the opening of Le Jardin des Sens (The Garden of the Senses) in Montpellier, France, which earned high praise and, by 2008, had been awarded three Michelin stars, becoming one of the region’s most prominent top-tier restaurants.

The cuisine of Jacques and Laurent Pourcel is deeply influenced by Mediterranean flavors, featuring locally sourced ingredients and an expert balance of contrasting elements—the cool and the hot, the tender and the crispy, the sour and the sweet. The two brothers work seamlessly together in the kitchen; Jacques excels in seafood dishes and desserts, while Laurent is renowned for his meat dishes, appetizers, and signature sauces.

Jacques and Laurent Pourcel will be guest chefs at the Nordic fine-dining restaurant HYG from January 19 to 20, 2018, serving a six-course lunch and dinner menu at NT$5,000 per person (excluding service charge).
