Authentic Hainanese chicken with slow-braised thigh meat and chicken-fat-infused rice — Qincheng Hainanese Chicken becomes the office workers’ “ultimate indulgence”

Nestled in a lane near Nanjing East Road Station, “Qincheng Hainanese Chicken Rice” serves nothing but this Hainanese chicken rice set, described by customers as “absolutely addictive.” The delicious chicken thighs have become a sensation across Taipei, and every office worker nearby knows about it.

Now in its seventh year, “Qincheng Hainanese Chicken Rice” has made a name for itself. Owner Lin Yingfang says she discovered a Hainanese chicken rice spot in Thailand that was hugely popular with Taiwanese tourists, which inspired her business idea. She spent two months there as an apprentice to master the recipe and bring its authentic flavors back to Taiwan. Talking about the unforgettable chicken thigh, Lin said, “We use only healthy chickens without any off-putting smell. Instead of boiling the thighs over high heat, we braise them slowly — a technique rooted in ancient traditions. This makes the meat tender, sweet, and perfectly intact in shape.”

“You must dip the chicken thigh in the boss’s special soybean paste and ginger-cilantro sauce — there are multiple ways to enjoy a single thigh!” says Mr. Liu, a regular for five years. The shop offers two sauces: Lin explained that the soybean paste is imported from Thailand, while the ginger-cilantro sauce is commonly used in Cantonese-style restaurants to accompany steamed chicken. It’s made by mincing ginger and scallions, then mixing them with canola oil — healthy and bursting with aroma. Another key to the Hainanese chicken rice’s deliciousness is the rice: Thai jasmine rice is cooked in the broth from braising the chicken thighs, with pandan leaves and milk added. This results in fragrant, glossy rice that’s flavorful, soft yet separate, and pleasantly mild.
