The Neo19 in Taipei’s Xinyi District has become the stronghold for Taiwan Hu Tong Yakitori (under the Orange Flame International Catering Group), which has previously introduced Ippen Ramen, the world’s second-best grilled pineapple bread ice cream, Hokkaido’s GARAKU soup curry, Kibei’s tonkatsu rice bowl, and Taipei Niaoxi. Now, it has once again brought in Hakata Kaburaya’s Taipei Xinyi Branch, which officially opened on June 15.

Sukiyaki originates from Fukuoka in Japan and has a history of nearly 800 years. “Mizutaki,” also known as “Hakata-ni,” refers to a chicken hot pot that is simply simmered with water and chicken. The broth is completely unseasoned, and Hakata Kaburaya is one of the renowned spots for Hakata mizutaki. Its founder started out in the chicken farming business, raising “premium-brand chickens.” The fresh bone-in chicken thighs are cut into pieces, their color tender and pink, stacked in the hot pot like blooming petals.

Hakata Kaburaya’s Taipei Xinyi Branch uses Taiwanese Gui Ding chickens, which have delicate textures and sweet flavors. The broth is slowly simmered using only chicken thigh bones without any added seasonings, perfectly recreating the essence of mizutaki cuisine. The recommended order of tasting is to drink the broth first, then eat the meat. The milky-white broth is rich in the essence of chicken soup, with a gentle flavor that warms the stomach and heart. Later, collagen jelly is also added. From the opening day on June 15 to June 30, diners enjoy a 12% discount.
