Even as a popular buffet restaurant in Taipei, Café Kaffe House at Grand Hyatt Taipei continues to host special events. From June 12 to 30, it presents the “Siam Flavor Journey” Thai cuisine feast, inviting Chef Sane Sripeaw from Talay Thai Restaurant & Bar at Hyatt Regency Hua Hin in Thailand to showcase signature Thai dishes, allowing guests to enjoy authentic Thai flavors without leaving the country. Moreover, there will be a second round of lucky draw on July 1, with a chance to win a complimentary three-night stay at either Hyatt Regency Phuket Resort or Hyatt Regency Hua Hin.

Chef Sripeaw, who has previously been a guest chef at Hyatt Regency Incheon and Hyatt Regency Guam, said that Thai cuisine is generally divided into four regional styles: northern, northeastern, central, and southern. Northern Thai cuisine tends to have milder flavors, with cooking techniques that emphasize grilling. Northeastern Thai food is known for its strong flavors, often featuring sticky rice and spicy salads. Central Thai cuisine highlights ingredients such as lemongrass, kaffir lime, and galangal, creating aromatic and flavorful dishes. Southern Thai food is typically spicier, often using coconut milk and seafood, and is characterized by a balance of sweet, sour, salty, and spicy elements. It also features a strong emphasis on the harmony between flavors and local geography. There are also crispy fried snacks, spicy dips, and various curry dishes.

The chef’s recommended delicacies include crispy rice crust with coconut milk peanut pork sauce, spicy and sour shrimp soup, pork green curry, and fresh mango sticky rice.
Chef Sripeaw said that the crispy rice crust with coconut milk peanut pork sauce is a dish that leans toward southern Thai flavors. It not only tests the chef’s skill in controlling the frying time and heat of the rice crust, but also the ratio of coconut milk, which is one of the key factors influencing the flavor of the dipping sauce. The rice crust, with its ivory-like color and gentle hue, offers a satisfyingly crispy crunch and a faint aroma of rice, leaving diners wanting more.
