Covering a vast area, Kaohsiung’s Kaisyuan Night Market claims to be Taiwan’s largest night market. But being the biggest isn’t just about size — it takes numerous stalls, a wide variety of delicious food, and great entertainment to live up to the title. Inside Kaisyuan Night Market, food vendors are so densely packed that they’re almost overwhelming. Among them is a semi-hidden queue-worthy stinky tofu stall that you might not even notice unless you read the sign carefully. Many locals often come specifically to take some away — all just to savor its uniquely salty, crispy, fragrant, and sweet-aftertaste texture.

This “Fermented Stinky Tofu” stall in Kaisyuan Night Market makes quite an impression just with the word “green” on its signboard. At first glance, one might associate it with artificial coloring, but a closer look at the night market stall reveals white square blocks of tofu soaking in a thick, slightly greenish broth. The tofu is fried to order, and when it comes out of the pot, you can smell a refreshing aroma that’s stinky yet fragrant.

““Our tofu is all soaked and fermented in vegetable juice, with no weird chemical seasonings,”the owner explained while stirring the broth, noting that the stinky tofu here uses vegetable juice for fermentation to give the tofu a natural “stinky fragrance.” A whole pot of stinky tofu is displayed in a transparent container right at the front of the stall — a promise to customers. If anyone has doubts about the ingredients, the owner confidently declares his “Stinky Tofu Manifesto”: “If it doesn’t taste good, I’ll eat the loss — it’s on me.”
The stinky tofu, which appears green in the broth, loses its green color after frying. The “Fermented Stinky Tofu” is deep-fried to seal in the juices, resulting in a slightly thicker and crunchier skin. When you take a bite, you can see the beautiful sight of juices seeping from the pores. “A lot of stinky tofu in Taiwan is just too smelly for me to eat, but this one tastes really good,” said Mr. Ou from the United States. The stinky tofu here lacks the overpowering sharpness of typical versions, instead offering a crispy, fragrant taste with a natural bean aroma. Paired with the owner’s homemade pickles, it’s addictive.
