Starting with traditional Italian and Southern European cuisine, the dishes are adjusted and refined—incorporating local Taiwanese flavors to create European-style meals that suit local palates. The ingredients and tastes here are meticulously selected. In the center of the restaurant is a teppan grill where all main dishes are expertly prepared by the chef, using minimal seasoning to highlight the fresh, original flavors of the ingredients.

Located next to the Taipei Metro Tian Gong Station, "Rabbit Carroll Gastropub," now in its third year of operation, specializes in European-style teppan cuisine. Drawing from traditional Italian and Southern European dishes, the menu is adjusted and refined with locally adapted ingredients to cater to Taiwanese tastes. The restaurant is meticulous about its ingredients and flavors. Made with a generous amount of fresh greens, dressed in a light sauce of cold-pressed olive oil, garlic, and anchovies, paired with teppan-seared tuna sashimi and a semi-cooked boiled egg. It’s healthy and not heavy at all. There's a wide variety of vegetables including romaine, baby lettuce, arugula, red chard, green chard, Chinese flat cabbage, green beans, tomatoes, olives, green olives, and soft-boiled eggs, plus grilled tuna.

A boneless chicken leg stuffed with vegetables is slow-cooked on the teppan until crispy on the outside, served with wild spot prawns and a Spanish Basque sweet pepper-flavored sauce—juicy and tender. Basque is a region in Spain known for its red peppers, and this sauce is made from roasted red peppers, tomatoes, garlic, olive oil, and smoked paprika.

Literally translated from Italian as "fried oranges," this is a classic Italian dish where cheese is wrapped inside rice balls shaped from cooked rice, then deep-fried.

Premium Ribeye Steak with Blue Cheese Sauce – NT$880
Each steak is over 10oz of American ribeye, using Prime grade premium chilled meat. The beef is not marinated to preserve its original flavor, enhanced only with sea salt and black pepper. The chef says, “Of course, some ingredients do well with marination, but you lose the original deliciousness of the food. We don’t want to ruin the taste of the ingredients with excessive seasoning.”

Devil’s Chicken Wings
Carefully selected free-range chicken wings are marinated with sautéed spices, chili, and olive oil. They’re mildly spicy and fragrant—not the overwhelming kind of heat, but rather a gentle and pleasant taste.

Mortal Fried Chicken
This dish is quite interesting, marinated with a special stinky tofu paste that gives off a very unique aroma.

In addition, the pub currently offers a variety of different beers, many of which are rare in Taiwan. The most special is the "Doomsday Monk Beer," reportedly brewed by monks from the monastery featured in *Breaking Bad* (located in New Mexico).
