Red miso hot pot differs from regular hot pot in that it uses a spicy red miso base blended with a variety of specially selected chili peppers, resulting in a uniquely spicy and flavorful taste. There are a total of 10 spice levels to choose from, ranging from Lv.1 to Lv.10. Generally, Lv.3 is about as spicy as Korean kimchi, while Lv.5 matches the spiciness of typical spicy hot pot found in the market. Levels Lv.7 and above are not for the faint of heart—if you don’t have an exceptionally high tolerance for spice, it’s best not to challenge yourself, as only 1% of people in Japan can handle levels Lv.7 and above.

A popular item in the red miso hot pot is “beef intestine,” and the base comes with pork, tofu, chicken meatballs, Chinese cabbage, bean sprouts, and other vegetables. After finishing the ingredients, you can add rice and cheese to the remaining broth to make a rich and filling cheese rice porridge—guaranteed to fill you up to the top of your head. In addition to cheese rice porridge, you can also add ramen or udon noodles. Other fan favorites from the previous Zhongshan branch include Akakara cheese tamagoyaki (Japanese omelet), mentaiko (spicy cod roe) tamagoyaki, and tebasaki (fried chicken wings).
