What Taiwanese dish do Universiade athletes love the most? The village offers hundreds of dishes, among which the most popular Taiwanese food is crispy fried chicken, followed by beef noodles, with 900 bowls consumed daily. The beef noodles served in the village come from Love. Aged 21 Beef Noodles. On the 25th, Love. Aged 21 also announced the launch of two new menu items: Spicy Sichuan-Style Beef Noodles and Ultra-Premium Spicy Sichuan Essence Beef Noodles.
The brand-new Spicy Sichuan-Style Beef Noodles is the latest creation by Chef Chen Zhongguang, aiming to recreate the nostalgic, traditional flavors of Sichuan cuisine. To fully capture the bold and spicy essence of the broth, additional spices such as Sichuan peppercorns, star anise, bell peppers, and chili peppers are added. The broth is simmered and concentrated from 300 liters down to 280 liters, and is paired with beef brisket and belly marinated in premium aged soy sauce. Rich and flavorful, a few drops of refined Sichuan peppercorn oil are then added to give the broth a fragrant, spicy kick without being greasy. Each bowl is priced at NT$360 (comes with a cup of coffee-flavored black tea).
The Ultra-Premium Spicy Sichuan Essence Beef Noodles specially selects wagyu short ribs, beef brisket, oxtail, and beef tendons. The rich marbling of the wagyu short ribs adds layered aroma, while the oxtail is slow-cooked until tender and soft. The beef tendons are especially bouncy and full of collagen. For the noodle component, Chef Chen has specially chosen the chewy and delightful Guanmiao noodles.
