Taipei’s Grand Hotel Taipei held its “Modern Culinary Art – Indian Food Festival” event today (25th). The event is organized by the hotel’s International Culture & Gourmet Team, with Chef Ajay Chopra making his debut in Taiwan. The Indian food festival will run for 10 days, starting from August 25 to September 3.
This time, the Grand Hotel Taipei has collaborated with The Taj West End, a 130-year-old five-star hotel. Chef Chandan Taneja from Bangalore brings Indian cuisine to Taiwanese diners. The dishes include various curries made with a blend of spices, as well as surprisingly creative uses of cheese in cooking, such as “Grilled Mango Cheese Cubes” and “Grilled Cheese Chicken Bites.” The type of cheese used in India is called paneer. This cheese does not contain animal rennet, so it does not melt when heated during cooking, yet it has a crispy, springy texture.
