Exclusive First Look: Sapporo Enjin Ramen Begins Soft Launch — Feel the Impact of High-Temperature Flame Guns

For ramen lovers like me, I had to be the first to try it out (okay, mostly because I love ramen myself). According to the announcement on Sapporo Enjin Ramen’s Facebook page, they were set to open at 11:30 AM, but when I arrived at 10:30, there were already nearly 10 people in line. No worries — with a daily limit of 100 bowls, I knew I’d get my hands on one.

Sapporo Enjin Ramen from Hokkaido began its soft launch on the 11th. For ramen lovers like me, I had to be the first to try it out (okay, mostly because I love ramen myself). According to the announcement on Sapporo Enjin Ramen’s Facebook page, they were set to open at 11:30 AM, but when I arrived at 10:30, there were already nearly 10 people in line. No worries — with a daily limit of 100 bowls, I knew I’d get my hands on one.

Around 11:20 AM, the staff started handing out number cards and small fans. I got number 11, so I was in the clear. The shop’s interior has a dark color scheme, and the lighting isn’t particularly bright — very Japanese-style. The most unique feature is the large transparent window in the kitchen, where you can watch the chef use a flame gun to blend oil and broth using 1300-degree flames. I’m sure once it officially opens, this place will be packed with people taking photos.

The most exciting highlight is definitely the use of high-temperature flame guns to blend the oil and broth.

After being seated, the staff came to take our orders. Since this was a soft launch, only two options were available: Flame Miso Ramen 2012 and Sea Smoke Flame Tide Ramen. Being someone who prefers stronger flavors, I went for the miso ramen and will save the salt-flavored tide ramen for next time. Both types of ramen cost NT$240 each, with an additional 10% service charge. Once officially opened, there will also be options like Flame Miso Ramen 2011 and Extra Spicy Ramen.

Possibly because the broth needs to be heated with the flame gun, the service is a bit slower, but still acceptable. Watching the chef “light the fire” a few times, I noticed that since more customers likely opt for the miso ramen, the miso broth is prepared in larger batches and then kept warm over a low flame. As for the Sea Smoke Flame Tide Ramen, it’s almost always made one bowl at a time.

Once the ramen arrived, I noticed the pork slices were in small chunks rather than the usual slices — tender and soft, and quite tasty. There were also some red chili threads on top, which seemed to be more for visual appeal and a slight flavor boost rather than actual spiciness. The noodles were about average, nice and chewy. And as expected, the broth was super “rich,” slightly thicker than your typical ramen broth, so it clung nicely to the noodles, letting you fully enjoy the essence of the ramen.

Like all miso ramens, the taste is strong, but not overwhelmingly salty. That said, if you’re used to lighter flavors, you might find it too much and end up drinking lots of water. In that case, you might want to go for the salt-flavored “Sea Smoke Flame Tide Ramen.”

The soft launch runs from February 11 to February 28, with a daily limit of 100 bowls. It officially opens on March 1, operating from 11:00 AM to 12:00 AM.
