Well-known American instant noodle expert Hans Lienesch released the 2020 list of the most popular Taiwanese noodle dishes, highlighting both the booming market for instant, boiled, and stir-fried noodles in Taiwan, and the fierce competition in the instant noodle industry.

The 2020 Taiwan Top 10 Noodle Dishes list, announced by instant noodle expert Hans Lienesch, ranked from first to tenth as follows: Ashé Canteen’s Rich Braised Beef Noodles, Mom’s Stir-Fried Noodles Old Chengdu Dan Dan Noodles, Mom’s Stir-Fried Noodles Thai Green Curry Dry Noodles, Little Stir-Fried Noodles Vintage Style Double Scallion Oil Fine Noodles, Little Chef Thai Green Curry Chicken, Zeng Stir-Fried Noodles Scallion & Prickly Ash, Shin Hong Lukang Rice Vermicelli Old Ginger Sesame Oil Flavor, Taiwan Tobacco & Liquor Shaoxing Wine Pickled Vegetable Beef Noodles, Sanmi Stir-Fried Noodles Scallion Flavor, and Ashé Canteen’s Rich Sauce Stir-Fried Noodles Tainan Dan Zai Noodles.

Mom’s Stir-Fried Noodles’ classic and best-selling Old Chengdu Dan Dan Noodles and the Blue Elephant Green Curry, which sold 100,000 portions within months of its July launch this year, earned second and third place in Taiwan’s quick-cooked noodles rankings. Lienesch described their noodles as having a rich texture and a well-balanced curry flavor with a strong Thai taste.

Meanwhile, the Da’an flagship store of Mom’s Stir-Fried Noodles introduced a Rich Shaoxing Chicken Soup Noodle in the autumn/winter season. Its broth is slow-simmered with a whole old hen and enriched with Jinhua ham and scallops. The thick chicken flavor fills your mouth upon drinking, and your lips will be coated with the gelatinous richness from the slow cooking. Paired with chewy Guanmiao noodles and the subtle aroma of Shaoxing wine, it brings plenty of warmth to the cool autumn days.
