This is a poetic tribute by the Yuan Dynasty poet Yang Yunfu to the foremost Mongolian royal banquet—the Zaoma Feast.

 Zaoma Feast

The Zaoma Feast was the highest-standard, grandest in scale, longest in duration, most ethnically distinctive, and most comprehensive in presenting Mongol-Yuan culture among national banquets during the Mongol-Yuan period. It can be hailed as the “Crown Jewel of Yuan Dynasty Mongolian Culinary Culture”. Also known as the "Zhisun Feast", the Zaoma Feast was a grand imperial banquet of the Yuan Dynasty that integrated drinking, song and dance, games, and competitions. Over 700 years ago, Emperor Kublai Khan of the Yuan Dynasty would host the "Zhisun Feast" every year during his tours to Shangdu to entertain nobles and dignitaries.

The Matryoshka Mongolian Banquet—Zaoma Feast

“Above the supreme heavens,

Ruling all things and beings,

Light shining upon the lands,

Blessing officials and posts far and wide.

Glory to the feast of the noyans founded by the Khan,

The auspicious two-year-old hairless whole lamb Zaoma Feast,

Presented as an offering of good fortune.”

 The Matryoshka Mongolian Banquet

In June 2019, the Matryoshka Mongolian Banquet made its grand debut, inheriting the distinctive culture of the Mongol-Yuan era, recreating the games and competitions of Mongolian imperial banquets. The restaurant’s ambiance, music and dance performances, and even the dining utensils all embody a cohesive Mongolian aesthetic, delivering to guests the finest ceremonial experience of Mongolian grassland culture.

 Whole Roast Lamb

Whole roast lamb is the most iconic dish of Mongolian cuisine, specially prepared for honored guests or grand celebrations. It is regarded as the most prestigious dish in Mongolian dining. The lamb is sourced from local Hulunbuir lambs and roasted over high-temperature charcoal for five hours, resulting in a crispy exterior and tender interior with exceptional color, aroma, and taste. The whole roast lamb is delicious, ceremonially rich, and carries deep, beautiful symbolism—it is the most sincere gesture of hospitality from the sons and daughters of the Hulunbuir Grassland.

 Roast Ox Head

Ox head banquet, also called the “Grand Opening Feast,” is a grand ceremonial banquet used by Mongolians to receive distinguished guests. It is also served during large celebrations or victory commemorations to pray for peace and safety. The ox head is simmered in red brine seasoned with traditional Chinese herbs until flavorful. Once it reaches about 70% doneness, it is roasted over high-temperature charcoal for five hours. The result is a tender, smooth texture with abundant collagen—a healthy treat suitable for all ages.
