S Restaurant & Bar’s Chef Constant Cheung (Zhang Zhuozhi), drawing on years of international culinary experience, has created an exclusive new-season menu for the series. Using warm ivory white as the dominant color on the dining table, the dishes blend elements from multiple cuisines in the Royal Doulton x S Hotel winter collaboration — hearty and comforting cuisine. The starter cold appetizer “Rock” is made with elements such as spinach, seafood broth, milk, and marinated scallops to form an edible green rock. With a soft and fluffy texture, it opens up the infinite creativity of molecular gastronomy in a playful way, while also showcasing visual plating art through the contrast of spinach green and ivory white plates.

Beyond the visual and taste contrasts, the chef also centers the experience around a “soft-spicy” comforting aroma, offering a mellow and fragrant sensory experience. One dish, “Tomato, Green Curry, Sakura Shrimp,” elevates the umami layers and textures of the dish with the spicy kick of green curry, paired with grilled shrimp flatbread.
