This is a pancake shop famous for its petal-shaped creations, but the owner seems to never have a dull moment. In addition to selling handmade pancakes and drinks, this summer they’ve brought in a dessert tower expert to share the secrets of making dessert towers. The vibrant and delicate little towers we see here differ from those commonly found elsewhere in the “hardness” of their “tart shells.” These tarts adopt a “French-style tart shell” approach—the handmade shells must be baked twice in the oven until the exterior is slightly caramelized and firm. They are not crispy per se, but emphasize a crisp-hard texture and a toasty crust. As for the fillings, the seasonal fruits not only feature lovely colors but also mostly offer a sweet and tangy taste. For those who don’t enjoy sour flavors, there are also options such as chocolate or tiramisu in darker shades.
Actually, these desserts are mainly designed with Kaohsiung girls in mind. Sweet and tangy flavors like blueberry, lemon, and raspberry are recommended for energetic, youthful girls. Meanwhile, the French nut chocolate and Italian tiramisu series—dark-hued dessert towers with lingering bitter-sweet aftertastes—are suited for more mature ladies, best enjoyed with a pot of fine tea.
