As said in the movie "The Chef": "Even with tomato and egg stir-fry, every mom makes it taste different." This dish may seem ordinary and simple, but it’s actually quite tricky. With only tomatoes and eggs as the main ingredients, getting the right texture and flavor does require paying attention to a few key details. Today, I’m sharing how to make tomato and egg stir-fry like never before—read on to find out more.
Ingredients:
500g tomatoes
4 eggs
2.5 tablespoons ketchup
75ml water (or broth)
A small handful of chopped scallions
A pinch of salt
Method:
1. First, peel the tomatoes and cut them into chunks.

2. Add a little oil to the pan and sauté the tomatoes.(Lycopene is oil-soluble, so cooking with oil enhances its nutritional value and aroma.))

3. Clear a space in the center of the pan, add the ketchup, and stir-fry until fragrant. Then add the water (or broth), bring to a boil, and set aside. (Tomatoes are about 94% water, so using ketchup helps boost the dish’s overall aroma.)

4. In a clean pan, add a little oil, crack the eggs, beat them lightly, and pour them in. Stir until they are about 50% cooked.

5. Add the previously sautéed tomatoes back into the pan and stir-fry together until the eggs reach your desired texture. (For a thicker sauce, you can add a bit of cornstarch slurry to thicken.)

6. Finally, sprinkle on a little chopped scallion and a pinch of salt to season. Done.

Tips
1. Peeled tomatoes have a better texture, so I recommend peeling them. But if you find that too troublesome, you can skip this step.
2. To make tomato and egg stir-fry aromatic and flavorful, adding the right amount of ketchup is key.
3. For those who prefer softer, silkier eggs, after Step 3, you can directly pour the beaten eggs over the tomatoes, cover the pan to let the eggs set, then gently stir and season with scallions and salt.
