Tianjin Guoba
The main ingredient of the Guoba dish is guoba, made from top-grade mung beans and fine millet ground with water into a batter, then cooked into thin pancakes and sliced into willow-leaf shapes. A flavorful broth is made using sesame oil, chopped chives, chrysanthemum, starch paste, soy sauce, and fermented tofu. The guoba is then added to the broth, lightly stirred until completely coated, and served in a bowl, topped with chili oil, sesame oil-mixed sesame paste, fermented tofu sauce, and coriander leaves.
The Guoba dish is crispy, fragrant, smooth, and delicious. Paired with sesame flatbread and stick-like fried dough twists, it offers an exceptionally unique flavor.
