Steamed Dumplings with Juicy Sauce and Meat Filling
During the Qing Dynasty’s Qianlong era, legend has it that a man named Yuchang, out of his deep love for the traditional food—“juicy steamed dumplings,” spent seven years refining the crafting technique, eventually developing a unique flavor. He then opened a small shop serving juicy steamed dumplings in his hometown. Though modest in scale, the shop gained immense popularity due to the dumplings’ vibrant colors and delicious taste, as well as the distinctive aroma of the cured and sauced meat, becoming widely praised within a few hundred miles. Over time, a popular rhyme spread among the locals: “Descendants of the dragon dine at the dragon’s feast, a meal without Yuchang is truly a regret; juicy steamed dumplings are Yuchang’s pride, even the Jade Emperor would descend from his horse drawn by their aroma.”
.
It is said that later, Emperor Qianlong, while traveling incognito, overheard the ballads about Yuchang and grew curious. He went out of his way to visit Yuchang’s humble shop for a taste. The cured and sauced meat he tried was indeed: fragrant yet not greasy, visually enticing, mouthwatering upon the scent, and refreshingly delightful; as for the steamed dumplings: their wrappers as thin as paper, colorful as flowers, elegantly shaped with generous fillings, and when eaten, tender-layered, fresh and savory without being greasy, rich in seasoning, with thick, concentrated juice. Emperor Qianlong was full of praise, exclaiming, “How can such deliciousness exist in this world?...”
From then on, Yuchang’s humble shop became extraordinarily popular, its legacy passed down through generations. Later descendants, while preserving the original varieties and flavors, continuously added new offerings, gradually expanding and perfecting the tradition, which eventually evolved into today’s Old Yuchang range of cured and sauced dishes and dumpling selections.
An ancient once praised Old Yuchang’s cured and sauced dishes with the words: “A single bite of Old Yuchang makes one forget home for three months.” Others have used poetic lines to laud Old Yuchang’s steamed dumplings: “Amidst night-glowing cups of grape wine, beauties are enchanted by the moon’s glow.” This verse describes Old Yuchang’s dumplings as resembling a delicate moon, half-moon beauties that blend fine wine, gourmet food, and lovely company into a poetic ambiance.
