Sachima Peach
The Sachima Peach, commonly known as the Eight Immortals Longevity Peach, is one of the famous varieties of pastries in Tianjin. This "peach" evolved from cake peaches and has a history of about 100 years.
Ingredient formula:
(for 20 pieces) 3 kg of strong flour, 1.6 kg of eggs, 500 g of peanut oil, 2 kg of fried rice flour, 10 kg of powdered sugar, 4 kg of rice grits, 6.2 kg of white granulated sugar, 200 g of osmanthus
Production method:
1. Frying the noodles: Beat eggs with an appropriate amount of water, mix with flour, knead into a dough, let it rest briefly, then roll it out into thin sheets using a rolling pin. Cut the sheets into 8 cm-long noodle-like strips, sift off excess flour, and deep-fry them in oil until they turn a milky yellow color.
2. Applying the outer layer: Mix 10 kg of powdered sugar and 2 kg of fried rice flour evenly, add about 700 g of water, and stir to form a "cake dry" consistency. Then take 350 g of the cake dry dough and pour it into a peach-shaped mold to create a hollow "peach" base.
3. Making the filling: Place the filling of a finished "peach" (250 g of sugar, 150 g of rice grits, 10 g of osmanthus, 100 g of water) into a pot and simmer until 90% cooked. Remove from heat, add 250 g of fried noodles, stir well to combine, and form the peach core. Fill this into the center of the peach base, press and flatten it, then flip it over onto a flat surface to create a solid peach base.
4. Decorating: Paint various colorful scenes and images on both sides of the "peach."
5. Adding figures: For each portrait figure, use about 50 g of sugar, 10 g of rice candy, and 50 g of water. Melt these in a copper or aluminum spoon to form a paste of moderate thickness. Pour the paste onto an oiled stone slab, and as it cools, turn it over occasionally. Once the sugar hardens and turns white, shape it into various figures. After forming, attach the figures onto the peach and fix them in place, then finish with coloring.
Product features: Made with premium ingredients, unique flavor, beautiful decoration, easy to preserve. Each piece weighs 1.35 kg and has long been a luxurious pastry used for birthday celebrations and gifting.
