Youcha Noodles
Ingredients: 500g flour, 150g beef bone marrow oil, 20g black sesame seeds, 20g white sesame seeds, 20g walnut kernels, 10g melon seeds, an appropriate amount of white sugar and osmanthus sugar syrup.
Method: Place the flour in a pan and stir-fry over low heat for about 10 minutes until it turns wheat-yellow and is cooked. Sieve it through a fine mesh, then return it to the original pan. In another pan, heat the beef bone marrow oil over high heat until it begins to smoke, then immediately pour it into the cooked flour and stir well. Set aside. Lightly toast the black and white sesame seeds over low heat until fragrant. Roast the walnut kernels until done, remove the skins, and chop them into fine pieces. Combine them with the melon seeds and add everything to the flour mixture to make the fried flour paste.
Serving: Divide the fried flour paste into 10 bowls. Pour boiling water into each bowl and stir until it becomes a thick paste. Then add an appropriate amount of white sugar and osmanthus sugar syrup to each, stir well, and serve.
