Yam and Pork Rib Soup
Ingredients: yam, pork ribs, scallions, ginger, salt, yellow wine
Method: Wash the yam, peel and cut into pieces, then steam for 2 minutes. Wash the pork ribs. Fill a clay pot with water, bring to a boil, and skim off any foam. Add sliced ginger and scallion bundles, pour in yellow wine, then simmer over low heat for one hour. Remove the scallion bundle, add the yam, bring to a boil over medium heat, then reduce to low heat. After half an hour, add an appropriate amount of salt, continue simmering for another half hour until the yam and pork ribs are tender and soft.
