Mohe Chinook Salmon
-Chinook salmon is a valuable large economic fish species. It has a large, plump body with delicious meat that can be eaten fresh, as well as processed by curing, smoking, or canning, each method imparting a unique flavor. Salted roe, known as the famous "red caviar," is highly nutritious and enjoys an excellent reputation in the international market.
In China, Chinook salmon is an export product, referred to in English as Chum salmon, and is exported from Liaoning and Heilongjiang provinces to Japan.
Chinook salmon is not only a large, precious specialty fish of Heilongjiang Province but also one of China’s renowned freshwater delicacies. Its flesh is delicate, reddish in color, and delicious, with an extremely high fat content and considerable nutritional value. It contains 14.9–17.5% protein, 8.7–17.8% fat, 61.4% water, provides 1384 calories per 100 grams, along with 50 mg of calcium, 153 mg of phosphorus, and 1.9 mg of iron. Additionally, it contains carbohydrates and various vitamins. Its eggs are crystal clear and pearl-like, rich in phosphates, calcium, as well as vitamins A and D, and are widely recognized as a luxurious delicacy for banquets. When salted into "Chinook salmon roe," it becomes the internationally renowned "red caviar," which is highly popular among the general public in Europe and America. The Hezhe ethnic group living in Heilongjiang Province also uses Chinook salmon skin to make leather, crafting clothing, long boots, tobacco pouches, and wallets, among other items. The meat, liver, milt, and head of Chinook salmon all have medicinal value. Its meat helps to replenish weakness, strengthen the spleen and stomach, warm the stomach, and harmonize the middle—benefits that aid in treating edema, emaciation, indigestion, bloating, vomiting of acid, convulsions, boils, and more. Fish liver can be used to extract cod liver oil. Milt can be processed to extract protamine and formulated into various protamine preparations, used in treating reactions caused by excessive heparin injections; it also has a significant hemostatic effect on certain bleeding conditions (such as acute upper gastrointestinal bleeding and pulmonary hemoptysis).
