Known as the “crown of seafood,” abalone has been one of the “eight delicacies of the sea” since ancient times. Although called a fish, abalone is not actually a fish. It belongs to the class Gastropoda and the family Haliotidae, and is a single-shelled marine mollusk. Due to its ear-like shape, it is also known as the “sea ear.” The coastal areas of Dalian in Liaoning Province are dotted with numerous islands, and produce 70% of the nation’s abalone. Abalone is one of the most valuable types of seafood, with tender meat that is delicious yet not greasy. It is rich in nutrients and can be used in cooking or soup-making, offering endless delightful flavors. The shell of the abalone, known in traditional Chinese medicine as Shi Jue Ming, is believed to improve vision and remove eye opacity, which is why ancient texts also referred to it as “Thousand-Mile Sight.” Shi Jue Ming also has the effects of clearing heat, calming the liver, nourishing yin, and strengthening yang, and can be used to treat dizziness, blurred vision, high blood pressure, and other conditions. The colorful nacre layer of the abalone shell can also be used as material for ornaments and shell carving crafts.
