Dalian Shrimp Paste
The shrimp paste in Dalian mainly refers to the variety made by different restaurants, often served with scallions and local flatbreads such as salted fish pancakes—offering a delicious flavor. There are also canned, ready-made shrimp pastes, which are generally not highly rated by locals. Typically, there are only two ways to eat it: one is to mix it with an egg, a little chopped scallion, and salad oil, then steam it and eat it with scallions and flatbread; the other is shrimp paste tofu—just add the shrimp paste, a little water, and simmer it slightly.
