Braised Yellow Croaker with Tofu
Ingredients: 1 whole yellow croaker, 500g tofu, 25g soaked wood ear mushrooms, 1 bunch of Chinese flowering cabbage hearts, scallion segments, ginger slices, salt, monosodium glutamate (MSG), peanut oil, and cooking wine, all in appropriate amounts.
Preparation:

Clean the fish by scaling, gutting, and removing the gills. Pat dry and make diagonal slashes on both sides of the fish. Set aside. Wash the tofu and cut into thick slices. Rinse the wood ear mushrooms and Chinese flowering cabbage hearts.

Heat oil in a wok over medium heat. Add the scallion segments and ginger slices to sauté until aromatic. Then place the fish in the wok and lightly sear both sides. Pour in fresh broth and cooking wine, add salt, and bring to a boil. Skim off any foam, then add the tofu and wood ear mushrooms. Simmer over low heat until cooked through. Add the Chinese flowering cabbage hearts and MSG. Arrange the cabbage hearts around the edge of the plate and place the fish in the center before serving.

The fish is tender and delicate, with a delicious and pleasant flavor.
