Stir-fried squid with leeks
Stir-fried squid with leeks:
1. Soak the squid in warm water
2. Turn the head inside out
3. Wash out the dirt, then turn it back
4. Rinse clean and set aside
5. Bring water to a boil
6. Place the squid in the boiling water
7. Wait briefly, then remove and drain
8. Heat oil in a wok
9. Rinse the leeks, let them dry halfway, and cut into inch-long sections
10. Slice ginger, garlic, and scallions, and stir-fry in hot oil until fragrant
11. Add the squid and stir-fry over high heat, season with salt and MSG; add the leeks just before serving
12. Stir-fry quickly for a few more seconds until the leeks are just slightly softened.
Note: The squid is almost cooked after blanching; therefore, do not stir-fry for too long or it will become tough.
