Large Flat Apricot
The large flat apricot, a specialty of Liaoning Province, is a general term for premium sweet-kernelled apricot varieties such as "Dragon King Picture" and "Swarm of Bees." It earns its name from its large, flat kernels and is considered one of the finest among kernel apricots. It is cultivated in many mountainous areas across Liaoning. The round kernels of the large flat apricot are flat, plump, and highly nutritious, containing abundant fats, proteins, sugars, as well as essential minerals for the human body such as phosphorus, calcium, potassium, and iron. They can be eaten raw or processed into a variety of uniquely flavored foods and beverages such as almond paste and almond milk. The oil extraction rate of large flat apricot kernels is 50%, making them not only an excellent edible oil but also suitable for use as high-grade lubricants and anti-rust agents required in precision instruments and military industries, as well as raw materials for producing cosmetics and high-end paints. The apricot fruit is more fragrant than a plum but less acidic, and its pit naturally separates from the flesh. Its kernel can be used medicinally, and nutritional supplements made from large flat apricot kernels have effects such as moistening the lungs, dispelling wind, dispersing cold, and purging heat. The large flat apricot is of high quality and dual-purpose—both kernel and flesh. Its flesh can be made into dried apricots, apricot preserves, apricot jam, apricot sauce, and canned apricots, and is also used for making wine or vinegar. Regular consumption of dried apricots may help prevent cancer.
