Legend has it that during the Yuanhe era, the famous Tang Dynasty scholar Liu Zongyuan was demoted and sent to serve as Prefect of Liuzhou. While traveling through what is now the Taiping area with a few attendants, they stopped for the night at a small inn owned by a family surnamed Xu as it was getting late. The hospitable host served them his home-brewed wine along with his family’s secret recipe Niulaba. The crispy, flavorful Niulaba paired wonderfully with the wine. Before long, Prefect Liu had become quite tipsy. When he woke up the next morning, he found his attendants still fast asleep and the wine and Niulaba completely gone from the table. The Prefect sighed and said, “Upon sobering up, the Niulaba is nowhere to be seen!” From this emerged the charming legend: “In drunkenness, the world feels vast; upon waking, the Niulaba is gone.”
