Dipped Young Duck
Dipped Young Duck is a summer favorite among the Hakka people. Between May and July, when young ducklings are in season, this delicious seasonal dish can be enjoyed in both urban and rural Hakka areas. Made with tender duck, it features ingredients such as raw ginger, garlic, vinegar, sugar, and glutinous rice wine. The duck is slaughtered, gutted, cleaned, and scalded to perfection before being coated with fresh lard and cut into small rectangular pieces. It is then served with a dip made of lard, basil, or garlic-vinegar sauce for a unique flavor. (Meizhou)
