Also known as adzuki beans, those produced and processed by the Tuenyiu County Green Food Development Research Center are large, round, and glossy red in color. They come from the hilly and mountainous towns in the western part of Tuenyiu County and are highly nutritious. In addition to containing starch, protein, and fat, the beans are also rich in niacin, thiamine, riboflavin, vitamins B1 and B2, as well as minerals such as calcium, phosphorus, and iron. Their protein content is 2–3 times that of corn, 3 times that of rice, and 2 times that of barley.
