“Pearl Yellow” Millet
Produced by the Green Food Development Research Center of Tunliu County, “Pearl Yellow” millet is renowned both within and beyond the province for its plump grains, golden and shiny appearance, and deliciously fragrant taste when cooked into porridge—hence the name “Pearl Yellow.” This millet was once an imperial tribute during the Ming and Qing dynasties, and it made its way onto the dining table of the Great Hall of the People during the 12th National Congress of the Communist Party of China. It is highly nutritious. According to analysis by relevant departments, every 500 grams contains 1,600 international units of Vitamin A, along with high levels of Vitamin B and protein (about 13%), which are roughly double that of regular rice. One hundred grams of this millet contains 3.5 grams of fat, 29 milligrams of calcium, 240 milligrams of phosphorus, and 72 grams of starch. When cooked into porridge, a delicate, viscous layer forms on the surface called “millet oil,” which is an ideal food for new mothers and patients. It helps strengthen the spleen and stomach, nourish kidney qi, replenish deficiencies, and clear internal heat. Feeding infants “millet oil” can help regulate digestion, while drinking it on an empty stomach is believed to have an invigorating and aphrodisiac effect.
