Wucheng Swirling Pancake
The swirling pancake is a traditional delicacy from Wucheng, Shandong, with a long history of production. It originated in Guozhuang Village, Wucheng County (now Guozhuang, Jianguo Town, Gucheng County). Legend has it that in the spring of the 17th year of the Chongzhen Emperor’s reign, Li Zicheng was marching on Beijing when he passed through Wucheng. Drawn by the aroma, he dismounted and led his entourage straight into a small pancake stall. After enjoying a hearty meal, he watched with great interest as the pancake maker demonstrated his swirling technique. He remarked, “You’re holding up the sign for pancake-making — doesn’t this method just make it a swirling pancake?” And thus, the Wucheng Swirling Pancake got its name.
The Wucheng Swirling Pancake is made with carefully selected ingredients: premium flour, lean meat, and more. Its preparation is even more meticulous — the dough is kneaded repeatedly and adjusted in firmness according to seasonal temperatures. The fillings include pork, mutton, beef, and even egg. The pancakes are as thick as a finger and as large as a plate, with a glossy brown color. The crust is crispy and flaky, while the filling is soft, tender, and fragrant. It’s rich but not greasy, deliciously aromatic, and the more you eat, the more flavorful it becomes — truly unforgettable.
The “swirling pancake” is a traditional snack from Wucheng County, Shandong, with a history of over 400 years. Wucheng Swirling Pancakes are as large as plates and as thick as fingers, with a golden-yellow hue, crispy crusts, and tender fillings that exude a rich fragrance, leaving a lasting impression. Each pancake is about 20 cm in diameter and around 2 cm thick, featuring thin crusts and tender, juicy meat that is both crispy and tasty, with a unique flavor. Its origins are unclear, but it has been around for several hundred years. The pancake originated in Guozhuang (Guozhuang was once part of Wucheng, Shandong, but was transferred to Hebei Province in 1964; however, the lingering aroma of the swirling pancake remains in Wucheng, Shandong). In 2004, it was awarded the title of “Famous Snack of Shandong.”
